This yummy new appetizer is a blend of fresh tomatoes, garlic, pickled herring and basil served with grilled Italian bread.

 1 cup Roma tomatoes, peeled, seeded, diced
 6 Each Garlic cloves, roasted, minced
 1 8 oz jar Vita Pickled herring, chopped
 2 tbsp Basil, fresh, chopped
 to taste Salt and pepper
 8 each Sourdough bread, ½” slices
 1 tbsp +2 oz Extra virgin olive oil

Combine roma tomatoes, garlic, herring, basil, and extra virgin olive oil. Season to taste with salt and pepper.

Brush the remaining olive oil on the sliced bread and grill them before serving with chilled bruschetta mixture.
