Crepes filled with our delicious wine herring, cream cheese and pimentos.

Whisk together the eggs, milk, water, salt, and melted butter, and then add the mixture to the AP flour and stir to combine.
Pour 2 oz of this batter into a skillet over medium-high heat and flip the crepe after 20 seconds. Continue to cook for an additional 20 seconds, just until the crepe begins to brown. Remove from skillet and cool.
In a small work bowl, fold together the cream cheese, pimentos, and wine herring.
Fill the crepes with the herring mixture and fold into quarters. Serve cold.
