Baked potatoes are stuffed with Vita Herring in Sour Cream and cottage cheese and then garnished with sunflower seeds and parsley.

5 oz Vita Herring in Sour Cream, chopped
3 Russet Potatoes, baked
¾ cup Cottage Cheese
1 tbsp Sunflower Seeds, shelled
1 tbsp Fresh Parsley

Preheat oven to 400 degrees and bake potatoes for about 20 minutes.

Remove herring from jar, keeping any sour cream still on it and chop into smaller pieces.

Add cottage cheese and herring to mixing bowl, along with sunflower seeds.

Chop parsley and stir into mixture.

When potatoes cool, cut a slit in the top and use the opening to stuff with herring filling.
